One of my favorite ice creams. It might sound a bit strange, but it is so so good.
Ingredients
2 c whole milk
1⁄2 c heavy whipping cream
1⁄2 c sugar
5 egg yolks
3 T chopped thai basil
1 pn salt
Instructions
Combine milk, 1/4 cup sugar, basil and salt in saucepan. Bring to boil over medium heat, stirring constantly. Remove from heat and let steep for 30 minutes.
Transfer to blender and blend for 1 minute.
Whisk together eggs yolks and 1/4 cup sugar until thick and pale (or use electric blender)
Pour milk into egg mixture. Whisk constantly.
Return custard to stove on medium-low heat. Stir constantly with wooden spoon until it is thick enough coat the back of the spoon.
Remove from heat and strain into bowl.
Let cool for 20 minutes then add in heavy cream.
Chill until cold (~4 hours).
Put in ice cream maker and follow manufacturers directions.
