Thai Basil Ice Cream

Description

One of my favorite ice creams.  It might sound a bit strange, but it is so so good.

Ingredients

  • 2 c whole milk
  • 1⁄2 c heavy whipping cream
  • 1⁄2 c sugar
  • 5 egg yolks
  • 3 T chopped thai basil
  • 1 pn salt

Instructions

  • Combine milk, 1/4 cup sugar, basil and salt in saucepan. Bring to boil over medium heat, stirring constantly. Remove from heat and let steep for 30 minutes.
  • Transfer to blender and blend for 1 minute.
  • Whisk together eggs yolks and 1/4 cup sugar until thick and pale (or use electric blender)
  • Pour milk into egg mixture. Whisk constantly.
  • Return custard to stove on medium-low heat. Stir constantly with wooden spoon until it is thick enough coat the back of the spoon.
  • Remove from heat and strain into bowl.
  • Let cool for 20 minutes then add in heavy cream.
  • Chill until cold (~4 hours).
  • Put in ice cream maker and follow manufacturers directions.
